It was a wonderful Saturday afternoon. It had rained most of the morning. My house, that was previously in a creative mess, was mostly ship shape, and Ken had gone to a hunting and fishing extravaganza with his brother.
So I made me a pizza that I knew only I would eat. You know the one, the kind you fix when your friends come over, with toppings most men would not touch.
That's why I call it "Just for the Girls."

I must say, it was marvelous!
Ingredients:
- Pillsbury Thin Crust Pizza Crust (normally, I get the pre-made crust, but had this on hand)
- 3-4 boneless chicken breast, cubed
- 2 1/2 handfuls of baby spinach
- (2) Roma Tomatoes
- 1/2-1 cup of Marinated Artichoke Hearts, Chopped, reserve about 3/4 cup of marinade
- 1 cup of Feta Cheese
- 1 cup of Colby Jack Cheese
- 1/2 Cup Mozzarella
- Cavendars Seasoning
- Crushed Red Peppers
- Olive Oil
- (2) Papa John's Special Seasoning (what can I say, I love me some Papa Johns!) or can use Italian Seasoning
I will do my best with the instructions, but please know, I don't normally measure out everything and I like lots of seasoning!
Directions:
Prevent the oven to 400 degrees.
Heat 2 Tbs oil in a skillet, add spinach, cavendar seasoning, and crush red peppers. Saute until cooked thoroughly. Put in a bowl and set aside.
In the same skillet, add chicken and more oil if necessary. Add some more cavendars and cook chicken until the juices run clear.
Add chicken to spinach bowl along with feta, artichoke hearts, and Italian seasoning/special seasoning. Mix well.
Reserve some artichoke marinade for the base of your pizza.
If using the Pillsbury Thin Crust, go ahead and bake the crust for about 4-5 minutes. If not, go ahead and put the artichoke marinade on crust. (If you are using the thin crust, using your fork, make fork holes in the crust so that your marinade does not run all over the place.)
On top of marinade, add colby jack cheese and chicken mixture. Top with Roma tomatoes, mozzarella, and more Italian seasoning/special seasoning.

ReplyDeleteHaven, so, so true! My girlfriends and I always get a kick out of how different the pizza we order for ourselves is from the one our husbands get. If they were paintings, the girls would use a lot of green and the boys....all red.
