Lemon Blackberry Sour Cream Cake

You may remember that I had about five quarts of blackberries in the freezer, so I decided to make this cake from Bubble Crumb

Ingredients ...
1 package Lemon Cake Mix

1 C Sour Cream

4 eggs

1/4 C sugar

1/4 C water

1/3 C vegetable oil

splash of Absolut vodka

2 lbs (32 oz) fresh blackberries

Preheat oven to 350 degrees.

Mix all the ingredients together except the blackberries. Once everything is mixed, add the blackberries and just stir.

Spray a bundt pan with oil, add the mixture, and bake at 350 degrees for about 45 minutes. Let cake cool. Bubble crumb steamed hers for about 30 minutes. Be sure to check that out! I did not because I don't have a cake cover; however, I would love to try it if I did!


1 C powdered Sugar

2 – 3 Tbsp milk

Mix the two ingredients in a small dish and pour over cooled cake!

Enjoy, and be aware of what may come with your cake!
