March Menu


• Baked Spaghetti

• Chicken and Bacon Wraps

• Quiche

• Enchiladas

• Homemade Pizza

Bakes Spaghetti: Homemade Hospitality:

• 1 pkg. spaghetti cooked

• 1 ½ lb beef, browned (turkey ground)

• 2 cloves garlic

• 2 (16 oz) cans stewed tomatoes

• 1 (6 oz) can tomato paste

• 1 (6 oz) can tomato sauce

• 1 tsp. salt

• 1 tsp. sugar

• 1 tsp. oregano

• ½ tsp basil

• 1 pkg. Cheddar Cheese


Simmer sauce for 1 hour. Mix with spaghetti in casserole dish and cover with cheese. Bake until cheese melts.

  
Chicken and Bacon Wraps for Two:

• 1 Chicken Breast

• 4-6 pieces of bacon

• Cheese

• Tortilla Wraps

  
• In medium nonstick skillet, over medium-high heat, cook chicken 5 minutes or until no longer pink and juices evaporate stirring often. Season with Cavendar’s. Once cooled, cut chicken into strips. Cook bacon in microwave until crisp. Combine chicken, bacon, and shredded cheese in tortilla wrap. Add your favorite dressing!

Breakfast for Supper (Quiche):

  • Frozen Pie shell
  • 3 eggs
  • 1 cup heavy cream
  • 1/2 cup milk
  • Salt/Pepper  
In your frozen pie shell, add your ingredients such as cheese and whatever else you want. I use about half a bag of shredded cheddar, 7 pieces of canadian bacon, and a can of green chilies. Mix your other ingredients and pour on top of your whole ingredients. Cook at 350 degrees for about 30-40 minutes.

* I use both pie shells when I make this and just double the recipe. We eat one and freeze one for later. Using both pie shells, you can use a whole bag of shredded cheddar cheese, a package of Canadian bacon. Works great!

Enchiladas:

• 1 lb ground beef or turkey

• 1 can refried beans

• 1 small can of green chilles

• 1 package of taco seasoning

• 2 cups cheese

• 1 can enchilada sauce

• 10 tortillas

Brown ground beef or turkey. Add taco seasoning and can of refried beans and green chiles. Add ¼ cup of enchilada sauce and 1 cup cheese. Pour about 1/3 cup mixture in tortilla. Place tortillas in a greased 9x13 dish. Once all tortillas are filled and placed in dish, pour remaining enchilada sauce and cheese on top. Bake at 350 degrees 20-30 minutes or until cheese is melted.

Homemade Pizza:

• 1 can of thin pizza crust

• 1 ½ cups of pizza sauce

• 2 tablespoons of Italian Seasoning

• 2 cups shredded cheese (your choice)

• Turkey Pepperoni

Follow directions on the can of thin pizza crust. Add pizza sauce to crust, Italian seasoning, cheese, and pepperoni. Add additional seasoning on top (I use Papa John’s speciality seasoning or Cavendars)


Ultimate Chicken Strips from Bisquick:

• 3 boneless skinless chicken breasts (about 1 lb), cut crosswise into ½-inch strips

• 2/3 cup Original Bisquick mix

• ½ cup grated Parmesan cheese

• ½ tsp salt or garlic salt

• ½ tsp paprika

• 1 egg, slightly beaten

• 3 Tbsp butter or margarine, melted


Heat oven to 450 degrees. Line cookie sheet with foil. Spray with cooking spray. In 1 gallon resealable food-storage plastic bag, mix Bisquick mix, cheese, salt and paprika.

Dip half the chicken strips into egg; place in bag. Seal bag; shake to coat. Place chicken on cookie sheet. Repeat to use up remaining chicken. Drizzle butter over chicken.

Bake 12-14 minutes, turning halfway through bake time with pancake turner, until no longer pink in centers.

Serves 4
