February Menu

Here is our menu for February! I got the recipes from different blogs. I got them about two months ago, so I do not remember where I got them. If you see them on someone else's blog or it is yours, please let me know! I want to give credit where credit is due! Also, I don't have some recipes posted. I like to use allrecipes.com and recipezaar.com to find them. I don't alwasy measure exactly, but just eye it! So for all those measures out there, I will probably drive you crazy! Enjoy!




February Menu:
· Chicken and Biscuits
· Herb chicken
· Cubed Steak
· Baked Ziti
· Southwestern Chicken Sandwiches
· Chicken Cordon Blue
· Slow Cooker Buffalo Chicken Sandwiches
· Pot Roast


Herb chicken-6 tablespoons olive oil (I drizzled until I thought it was enough.)
-2 lemons, 1 thinly sliced, 1 juiced (I used an Herb & Garlic Lemon marinade instead)
-4 cloves garlic (I did not use any garlic.)
-1 teaspoon salt1/2 teaspoon ground pepper3/4 lb green beans (I used 1 can of French style green beans.)
-8 small red potatoes, quartered4 chicken breasts (I had chicken tenders, so I used 6.)
1. Wash and slice potatoes. (I always zap mine in the microwave after cutting them for about 2-3 minutes because they are never cooked enough for me in the oven.)
2. Place green beans in casserole dish.
3. Place chicken on top of green beans.
4. Pour marinade over chicken. Place potatoes around the side of the dish and drizzle with olive oil. Season with salt and pepper.
5. Bake in oven at 450 for 40 minutes or until chicken is completely cooked. Broil for a few minutes to get potatoes crisp. Enjoy!
Southwestern Chicken Sandwiches
You will need:
-4 skinned and boned chicken breasts
-2 tablespoons chopped fresh cilantro
-2 tablespoons vegetable oil
-2 teaspoons chili powder
-1/4 teaspoon ground red pepper
-1 garlic clove, minced1 cup (4-ounces) shredded Mexican four cheese blend
-1/3 cup mayonnaise
-4 French bread slices, toasted or just use buns like I did!
1. Place chicken between two sheets of heavy duty plastic wrap, and flatten to 1/2 inch thickness using a meat mallet or rolling pin.
2. Stir together cilantro and next 4 ingredients. Spread on chicken.
3. Grill, covered with lid, over medium high heat 8 to 10 minutes on each side or until chicken is done. (Or cook in the skillet, like I did!)
4. Meanwhile, stir together cheese and mayonnaise. Spread on bread slices. Place bread, cheese mixture side up, on a baking sheet. Broil 6 inches from heat 1 to 2 minutes or until cheese melts
5. Place chicken on bread. I served with fries and black beans mixed with chopped onions and sour cream (not pictured).
Baked Ziti:
This is my go to recipe because I always have the ingredients. If I don't have beef, I just make it a cheese baked ziti!
Ingredients:
-1 pound ground beef3 cups ziti cooked and drained (I use whatever kind of pasta I have in my pantry!)
-1 (26-ounce) jar spaghetti sauce
-8 ounces shredded mozzarella cheese3/4 cup grated Parmesan cheese, divided (Sometimes, if I don't have these cheeses I just use a Mexican four cheese blend that I ALWAYS have in my fridge. It is still yummy!)
Instructions:Preheat oven to 375 degrees.In a large skillet, brown meat and drain. Stir in ziti, spaghetti sauce, mozzarella cheese and 1/2 cup Parmesan cheese. Spoon into 9-by-13-inch baking dish. Top with remaining 1/4 cup Parmesan cheese. Cover and bake 20 minutes.

· Chicken Cordon Blue from Patty Roper

o 4 chicken
o 4 slices Monterey Jack cheese
o 4 slices cooked ham
o 1 can cream of mushroom soup
o ½ teaspoon pepper
o Preheat oven to 375 degrees. Pound breasts to get them flat and thin. Lay one slice of cheese and one slice of ham on top of each breast. Roll each breast up so that cheese and ham are on the inside. Use two toothpicks to keep the roll together. Place chicken in a casserole dish. Pour mushroom soup over chicken. Sprinkle with pepper if desired. Bake 40-50 minutes. Remove toothpicks before serving.

Slow Cooker Buffalo Chicken Sandwiches from Allrecipes:
Ingredients
4 skinless, boneless chicken breast halves
1 (17.5 fluid ounce) bottle buffalo wing sauce, divided
1/2 (1 ounce) package dry ranch salad dressing mix
2 tablespoons butter
6 hoagie rolls, split lengthwise

Directions
1. Place the chicken breasts into a slow cooker, and pour in 3/4 of the wing sauce and the ranch dressing mix. Cover, and cook on Low for 6 to 7 hours.
2. Once the chicken has cooked, add the butter, and shred the meat finely with two forks. Pile the meat onto the hoagie rolls, and splash with the remaining buffalo wing sauce to serve.
Pot Roast in Crock Pot:
- Pot Roast
- Potatoes
- Carrots
- Pot Roast Mixture
Wash and cut the potatoes. Follow directions on Pot Roast Crock Pot Mixture.



Cubed Steak - a recipe from my daddy:
- Cubed steak
- Soy Sauce
- Your favorite seasoning (mine is Cavendar's)
- Can of Mushroom
-Worcestershire Sauce
- 1/4 to 1/2 Water
Place the cube steak in a skillet. Pour soy sauce and worcestershire enough to cover the steak. Add about 1/4 to 1/2 cup of water. Add can of mushroom and seasonings. Cook over medium heat until meat is done. This is one of my favorites that my daddy cooks for me!

I also went grocery shopping at Kroger! They had awesome deals this week, and I had a lot of coupons for their awesome deals! Here is what I spent and saved!




Although I am not as good as some of you, I could have done cartwheels out to the car!

  1. Hey Haven! Love your blog! I am trying this year to use coupons. After I leave the grocery store I feel so proud of myself. I feel like I am bing wiser with the money God has blessed us with! You savings are impressive! Good job!
