Weekend Highlights

This weekend was full of relief, relaxation, and lots of fun!

On Friday, after an afternoon of looking over science notes, we grilled out and watched the Hangover with some family. I will have to say that I might have giggled a little.

Saturday morning, I cooked a first ever omelet out of egg beaters and took THE TEST. I came out feeling really good so we will see in July how good that actually was.

Then a cannonball was in order to celebrate the fact that I was free at last and to Guntersville Lake we headed. The cannonball was quite refreshing! Sun and fun on the lake, what more could a girl ask for on a Saturday afternoon? I finally finished reading this months Better Homes and Gardens as I was turning into a McDonald's Frozen Strawberry Lemonade.

You should always make sure you really rub your sunscreen in all over. Those neglected places will show their ugly, burning, red heads and for this creamy white skin girl, in just a few minutes.

We then met some friends for dinner at the Lakehouse. There was such a nice breeze on the patio, music was swaying, and the waiter was asking for our order. I quickly said "The Strawberry Chicken," please and then thought, "What in the world did I just order?"

I played it cool taking the first bite and then the next thing that I noticed my plate was empty! So the next time you see "Strawberry Chicken" on a menu, I encourage you to be brave and order it. It is fried chicken with strawberries on top with a strawberry cream sauce. Sounds great right? I assure you it is. It is even better if you chase it with a peanut butter cup cheesecake. Pinky promise.  

And if I could not get enough of the Strawberry Chicken, Ken made me some delicious strawberry pancakes on Sunday morning that will force me to make a better effort of going to the gym this week.
